Zucchini Bread



From The Kitchen of Robyn Haggerty

2 Cups of sugar
2 Cups of all-purpose flour
2 cups raw un-peeled grated zucchini (with seed removed)
1 cup vegetable oil
1 teaspoon salt
¼ teaspoon baking powder
2 teaspoons baking soda
3 eggs
3 teaspoons cinnamon
2 teaspoons vanilla
1 cup chopped nuts (Optional)

Preheat oven to 350 degrees

Combine all of the ingredients in a bowl, mix with an electric mixer on the lowest setting until well blended.

Pour the mixture into 2 well-greased/floured pans (I use Pam)

Bake at 350 degrees for 45-60 minutes or until toothpick pickInserted comes out clean.

Makes 2 loaves
