White Potato Bread

2 1/2 c. hot water
1/3 c. mashed potatoes, flakes or buds
1 Tbs. yeast
1/3 c. oil
1/3 c. sugar
1 Tbs. salt
4-6 c. bread flour

Combine water, sugar, potatoes and 2 c. of the flour and mix until flour is wet. Add yeast and mix until blended. Add oil, salt and enough flour for the dough to pull away from the sides. When all ingredients are properly mixed, knead 5 min. Turn dough out onto lightly oiled counter and form into loaves. Let rise until double in size.

Bake at 350 for 30 min.

Remove from pan immediately to cool. Brush top with butter if you want a soft crust.
