A light pasta dish with a bit of a twist!
Ingredients (Per serving):
2 oz. or 1 cup of cooked egg noodles
1/2 cup marinara sauce
Diced veggies of your choice (e.g. green peppers, mushrooms, onions, garlic, zucchini)
1 tablespoon balsamic vinegar
2 teaspoon parmesan cheese
Directions:
Boil egg noodles in water for about 8 minutes or until tender. Drain and set aside.
Spray a sauce pan with Pam or other nonstick spray. Saute vegetables until of desired tenderness. Add marinara sauce and heat through.
On a place, place egg noodles. Drizzle balsamic vinegar over noodles. Cover with marinara sauce. Sprinkle with parmesan cheese
