Crazy Delicious Sweet Potato Fries

This recipe contains two different flavors to try!

The brown sugar creates a crispy carmelization, and becomes the most amazing combination of salty and sweet! But if you're watching your waistline or sugar intake, try the Parmesan cheese for a different delicious flavor. Kids will love both flavors!

2 med. Sweet Potatoes, cut into wedges or shoestring fries
1/2 tsp. Cumin
1/2 tsp. Garlic powder
1/2 tsp. Chili Powder
1/2 tsp. Salt
1/4 tsp. Pepper
2 Tbsp. Extra Virgin Olive Oil

1/3 cup Brown Sugar
OR
1/2 cup Parmesan Cheese

Preheat oven at 425 degrees. Cut sweet potatoes into thin wedges or shoestring fries and place into large bowl. Add cumin, garlic powder, chili powder, salt, pepper and olive oil. (Set brown sugar or Parmesan cheese aside for now.) Toss until evenly coated.

Line a cookie sheet with aluminum foil and lightly spray with Pam. Spread fries evenly out onto cookie sheet. (HINT: The more room each fry has, the better. You will get a crispier fry if they are not touching and exchanging moisture. Also, never cook sweet potatoes with another dish in the oven as they will absorb its moisture and become a mushy fry!)

Cook for 20 - 25 minutes, TURNING half way through.

After they are cooked thoroughly, carefully place fries back into large bowl and LIGHTLY toss with the topping of your choice: Brown Sugar or Parmesan Cheese. Return fries to cookie sheet.

Place back into oven for anywhere in between 2-5 minutes depending on your preference.
