Recommended Internal Temperature

Fresh Beef, Veal, Lamb:
Ground - 160 degrees (F) or until no longer pink
Roast - Medium Rare - 145 degrees
Roast - Medium - 160 degrees
Roast - Well Done - 170 degrees

Fresh Pork:
All cuts - 160 degrees

Poultry:
Ground/whole turkey or chicken - 160 degrees
Unstuffed bird, medium - 170 degrees
Unstuffed bird, well done - 180 degrees
Stuffed whole bird - 180 degrees (stuffing must reach 165 degrees)
Poultry breasts, roasts - 170 degrees
Thighs, wings - Cook until juices run clear

Ham:
Fresh (raw) - 160 degrees
Fully cooked (to reheat) - 140 degrees

Wild Game:
All cuts, medium - 160 degrees
All cuts, well done - 170 degrees
