Pumpkin Bars

4 eggs
1 2/3 cups sugar
1 (16oz) can pumpkin
1 cup oil (or you can substitute applesauce to cut calories)
2 cups flour
2 tsp cinnamon
2 tsp baking powder
1/2 tsp ginger
1/2 tsp nutmeg
1 tsp salt
1 tsp baking powder

In a large bowl beat eggs, sugar, oil and pumpkin until light and fluffy. Stir together flour, baking powder and cinnamon, ginger, nutmeg salt and soda in a separate bowl. Add the flour mix to the pumpkin mix & mix thoroughly. It will still be a little lumpy because of the pumpkin.

Spread the batter in an non-greased 15x10x1 inch baking pan. This is a jelly roll pan or you can use a big cookie sheet as long as it has sides on it. They are bars so aren't suppose to get very high.

Bake in 350 degree oven for 25 to 30 minutes.

Frost with cream cheese icing. Your recipe for the icing is pretty close to mine so you can use whichever.
1 6oz cream cheese
2 cups powdered sugar
3 tbs margarine or butter
1 tsp vanilla
