Peach Cobbler


This is an old recipe of mine, and one of my top favorites! Delicious any time of the year!

Ingredients for bread topping:

1 cup flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk

Directions:

Sift dry ingredients together. Cut in shortening until mixture resembles coarse crumbs. Mix in milk to make soft dough. Stir only until moisturized. Set aside for now.

Ingredients for peach mixture:

1/3 cup sugar
1 tablespoon cornstarch
1 cup peach juice
2 1/2 cups sliced peaches (Hint: purchasing a 32 oz. can of sliced peaches usually produces the right amount of peaches and juice.)
1 tablespoon butter
1/2 teaspoon cinnamon

Directions:

Combine and mix sugar and cornstarch in a saucepan. Add peach juice and boil for one minute. Add sliced peaches. Pour into a baking dish.

Dot with butter and sprinkle with cinnamon. Drop batter for bread topping by small spoonfuls onto the fruit.

Bake at 400 degrees for 30 minutes.

Top with vanilla ice cream (organic vanilla bean ice cream for an extra special treat!).
