Crispy Bean Burritos
Ingredients:
8 Flour tortillas
Directions: First mix flour with water, just until a paste is created. Heat about two inches of vegetable oil in a large flat pan on medium-high heat. To prepare your burritos, scoop a heaping spoonful of refried beans onto tortilla, towards one end. Spread it out just a tiny bit so that it is a roll of beans. Cover with about 1/4 cup cheddar cheese. Roll into the tortilla tightly. As you come to the end of rolling the burrito, spread a little of the flour paste onto the edge so that it is sealed. The sides can remain open. Carefully place the burrito, pasted side down, into the oil. Turn frequently and continue to fry until burrito become a light golden brown. Allow to drain/cool on paper towels. Serve with a side of Ranch dressing, Blue Cheese dressing, salsa, or fry sauce (mixture of ketchup and mayonnaise).
Variations: Try adding left over cooked meat, and/or sauteed onions.
