Cornbread and Roasted Red Pepper Butter



Cornbread recipe:

Ingredients:

1 cup cornmeal
1/4 cup all-purpose flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg
1 cup buttermilk

Directions:

Generously grease muffin tins. Place in a oven at 375 degrees for 10 minutes. In a bowl, combine cornmeal, flour, baking powder, salt and baking soda. Beat egg and buttermilk; add to dry ingredients just until moistened. Pour into the hot muffin tins. Bake for 18 minutes or until golden brown and a toothpick comes out clean.

Roasted Red Pepper Butter recipe:

Ingredients:

1 red pepper, seeded and roasted
1 stick butter, softened and cut into small cubes
1/4 cup salt

Directions:

Place roasted red pepper into a food processor. Pulse for about 30 seconds or until smooth. Add butter and pulse until just combined. Lastly, add salt and pulse just until mixed, or about 30 seconds.
