Classic Mashed Potatoes



Ingredients:

5 lbs. Russet potatoes
1/2 Cup butter, softened
1 1/2 cups milk or cream
salt and pepper to taste

Directions:

Peel potatoes and cut into large pieces. Place into a pot and cover with cold water. (Putting your potatoes directly into cold water as soon as you cut them will keep them from discoloring.)

Bring pot to boil. Reduce heat just a bit and gently boil up to 40 minutes or until potatoes are very tender and easily pierce with a fork.

Drain water. Set the stove temperature to low.

Thoroughly mash the potatoes with a potato masher. Add butter, milk, salt and pepper and mix well.

Tip: I like to use an electric mixer to make it easier, especially when doubling the recipe for a large group!

Makes about 8 hearty servings.
