Chicken Salad in a Croissant


This chicken salad sandwich is delicious!

If you are planning to take it to a barbecue or picnic, don't forget to take it in a cooler with plenty of ice packs, of course (contains mayo)!

Ingredients:

4 cups cooked chicken, chopped into bite-sized pieces
1 cup celery, chopped
1/2 cup water chestnuts
2 teaspoons green onions, finely chopped
1 (20 oz.) can pineapple tidbits, drained
1/2 cup seedless red grapes, cut in half
1 cup mayonnaise
1 teaspoon salt
1/8 teaspoon pepper
8 larger croissants found at your grocery store's bakery

Directions:

In a large bowl, mix together chicken, celery, chestnuts, onions, pineapple, and grapes. Fold in mayonnaise and salt and pepper until ingredients are well coated.

Keep chilled until ready to serve. When you are ready to serve, stuff croissants with the chicken salad mixture.
