Candied Yams



Ingredients:

5 lbs. yams or sweet potatoes (about 6 large)
1/4 c. butter
1/2 c. packed brown sugar
Salt and pepper to taste
2 c. miniature marshmallows
1/2 c. orange juice

Directions:

Peel yams or sweet potatoes and cut into 1/2 inch-thick slices.

In a greased 9X13" baking dish, arrange yam slices, overlapping them as you go.

Cut butter into pieces and sprinkle over the yams. Sprinkle brown sugar evenly over yams.

Lightly season with salt and pepper.

Cover tightly with aluminum foil and place into a preheated oven. Bake at 325 degrees for about 25 minutes.

Remove from oven and uncover. Sprinkle marshmallows on top, creating an even layer. Drizzle orange juice over marshmallows.

Return to oven uncovered and continue to bake about 25 minutes until marshmallows are melted and gooey.

Makes 8 to 10 servings.
