Breakfast Casserole (Breakfast Strata)

This is a truly great casserole/strata, perfect for brunch. You can make it the day of, but it is excellent if you prepare it the night before, cover with foil, then bake the next morning before serving.

Ingredients:

1 pound of French bread, torn into bite-sized pieces
1 1/2 pounds shredded Cheddar cheese
1 cup cubed cooked ham
8 eggs
2 cups milk
1 pinch salt
1 dash hot pepper sauce, or to taste
1/4 cup chopped green onion
Optional: Load it up with any of your favorite vegetables such as asparagus, green or red peppers, mushrooms, etc.

Directions:

Preheat oven to 350 degrees. Using cooking spray, grease a 9 X 13 inch baking dish.

Layer in baking dish, half of your bread, half of your ham, half of your cheese. Repeat once more.

In a large bowl beat together eggs, milk, salt, hot sauce, and green onions. Evenly pour egg mixture over layers in the pan.

Bake covered with foil for 40 minutes, then uncovered for an additional 20 minutes.
