Glazed Blueberry MuffinsIngredients:
1 1/2 cups flour
Directions: Preheat oven to 350 degrees. In a large mixing bowl, mix the following together until thoroughly blended: flour, sugar, brown sugar, baking powder, salt, and cinnamon. Create a well in the center in which to later pour the wet mixture. Set aside. In another bowl, mix together until just blended: egg, butter, and milk. Pour mixture into the well in the dry mixture. Stir until just blended. Carefully fold in lemon zest and blueberries. Separate into 12 muffin cups evenly. Sprinkle Muffin Topping onto batter (see recipe below). Bake for 20 minutes. Remove from oven and drizzle Muffin Glaze (see recipe below) on top.
Muffin Topping:Ingredients:
1/2 cup pecans, chopped
Directions: Mix together ingredients and sprinkle over batter before baking.
Muffin Glaze:Ingredients:
1/2 cup powdered sugar
Directions:
Mix together until smooth and drizzle over muffins after baking. |
