Baked Apple Cake

From The Kitchen of Robyn Haggerty

Ingredients:

2 cups of sugar
2 large eggs
1 cup of Wesson oil
2 ½ cups of flour
2 teaspoons of cinnamon
1 teaspoon salt
4 cups of granny smith apples, peeled and sliced
1 cups of chopped walnuts (optional)

Directions:

Preheat oven to 350 Degrees

Oil a 9X13-inch baking pan. Cream the sugar, eggs and oil until very smooth and shiny. Add flour, cinnamon, baking soda and salt to the creamed ingredients, this mixture becomes extremely thick.

Add the 4 cups of apples and the walnuts. Stir apples and the walnuts into the wet ingredients. This mixture is very thick and hard to get even, but try to spread the apples and the walnuts even through the wet mixture.

Pour the mixture in the prepared 9x13 baking pan. Spread out evenly so that the apples are distributed evenly throughout the pan.

Bake for 1 hour. Cool for 1 hour. Use a serrated knife to cut the cake into squares.

Can be served plain or with whipped cream or ice cream. Can be warmed up in microwave if desired.

Enjoy!
